Our oil and our products

Our family has large olive groves in the Recco area and in the surrounding hilly areas. We produce an autochthonous oil from Lavagnina (Taggiasca), Pinola, Rossese, Leccino cultivars and an absolutely 100% Italian sweet or fruity oil.

The olives harvested by mechanical felling are selected, taken to the mill and within 24 hours defoliated and carefully washed.

The kneading , which represents one of the most important moments of the extraction cycle, takes place at a controlled temperature (cold extraction) which allows all its organoleptic qualities to be preserved to the maximum.

The oil thus obtained is then stored in rooms equipped with an air conditioning system in stainless steel tanks under a nitrogen head to ensure excellent conservation. Our oil, yellow in color with green reflections, is round, light and delicate on the palate, with an almond and pine nut aftertaste.

The intense aroma lends itself perfectly to the raw dressing of various foods. But it is especially an excellent oil to combine with fish-based dishes because it does not cover the taste, on the contrary it enhances the flavor.
